Chili is a great wholesome dish to warm the insides on cold winter days. It’s easy to make, hard to mess up, and uses a single pot, so clean-up is a breeze.
Ingredients
Fresh:
- tomatoes
- red onion
- green pepper
- ground beef
- spicy red pepper (optional)
Canned / jarred:
- black beans
- tomato purée
- salsa
- corn (optional)
The proportions aren’t finicky. I use 4 tomatoes, 2 medium onions, 2 cut peppers, 3/4lb ground beef. All canned items are just the whole regular size can (10-15oz) dumped in.
And of course you will need a large pot with a cover, olive oil, salt, and garlic powder / any other spices as desired.
Process
- Cut up the tomatoes, onion, and pepper.
- Add and heat olive oil in the pot.
- Add onion and pepper to the pot with garlic powder. Sauté for about 6 minutes.
- Add ground beef to the pot and salt. Break it apart with a wooden spoon and cook about 8 minutes.
- Add tomatoes, tomato purée, beans, salsa, and corn to the pot.
- Simmer for an hour or two with the lid closed.
Ladel the chili out of the pot and let it cool enough to eat. Scoop with chips if desired or eat directly with a spoon. Add cornbread and apple juice to the table for a full meal. Enjoy!
